For this super easy Quick Eggplant Snack you need
- 1 Eggplant
- 1 Handfull of small Tomatoes
- 2 big spoons of (Miracle Whipp) Mayonnaise
- 1 Garlic clove
- 1 Baguette
Spread: Press a clove of garlic into the two heaped tablespoons of mayonnaise and mix well.
Slice the baguette, tomatoes and eggplant. Salt the eggplant slices, pierce the slices several times with a fork, and fry them in a pan. Now top the baguette with the fried eggplant slices. Add a little of the garlic mayonnaise and finish with the tomato slices.
This is a super easy party snack that I like to prepare for gatherings with friends if they don’t mind the garlic.
You can use a variety of breads for this tasty snack, but I would recommend one made with sourdough for the balanced flavor. My aunt uses toast rusks/Zwieback instead of bread, which is also surprisingly delicious.
You can also omit the baguette altogether. To do this, simply use two slices of eggplant (and slightly bigger ones) instead of one. So it is then stacked: eggplant slice, garlic mayonnaise, tomato slice, garlic mayonnaise, eggplant slice. And now you have great antipasti!
